Is there any latest updates on the the pivot functionality in new UX which can be done any user ?
If yes, can someone please share the link of the update and the steps to do that ?
I think this link will get you what you are looking for: https://help.anaplan.com/anapedia/Content/New_User_Experience/Use/Worksheets/Grid/Pivot-a-grid.htm?cshid=a-3ab0d9a0-193a-4e0f-83ee-9d4076e9e11d
Alternatively, I believe the user could create a personal page, and then be able to do some pivoting that way, if they wanted to keep that view to use time after time.

In addition to what @jasonblinn said, pivoting the worksheets can be done in runtime environment meaning it will not be saved once you come out of the worksheet. It was part of April 2020 release
