One model has been changed from Deployed to Standard by mistake.
If I re-change from Standard to Deployed, will I be able to sync again from DEV without losing anything?

Assuming there were no structural changes made, yes. You should not have an issue.
You could also use the "Revert to last Revision" button if there were changes made in Production to revert back to when the model was compatible with your development instance.
