Can anyone offer a suggestion as to why the Code and Product sections are grayed out here and not mapping?

The usual reason for the mappings to be grayed out is either they are formulated & hence can't be assigned. Secondly, they might be List formatted line items and hence the the list items will be assigned directly from the selected lists.
Hope someone specifies some more reasons for the graying out!!
